The Chef: Pastry Chef Sahil Taneja realised his passion for the four magic ingredients – sugar, flour, butter and eggs and set off to England in his quest to learn more about the art and science of baking. In 2008, Sahil worked towards earning a professional degree in Bakery and Confectionery and since then there has been no looking back. In the 4 years that he lived in England, he worked in the pastry kitchens of reputed names such as Malmaison- Newcastle, Patisserie Valerie- London and Harrods in London –one of the world’s most indulgent luxury stores. While working in these kitchens entailed early starts (sometimes as early as 5 am) and long hours, the bonus was the satisfaction of having his cakes from these kitchens being devoured by high profile clients such as Brad Pitt, Boy George, Mohammed Al Fayed, the Royal Family of Qatar, House of Lords and London Mayor’s office and visiting Bollywood celebrities. The Patisserie: Conçu evolved as a concept over a period of time but its roots were planted firmly in England. Conceptualised by husband and wife team (Sahil Taneja and Swati Upadhyay), Conçu is a cake boutique that specializes in bespoke celebration cakes tailored to the taste and specifications of the client. ‘Conçu’ – a French word that translates as crafted or designed aptly describes Sahil's cakes that are designed with much creativity and precision. Every product is crafted with elegance and perfection to produce a luxurious dessert that combines subtle flavours and myriad textures. The chef’s love for fine European pastry is reflected in his creations- many of these are traditional classics with modern interpretations.
